If you’re running a tough training schedule in preparation for your next big race, you know how important protein is to your diet. This sandwich has salmon and egg–both excellent sources of protein–and also features avocado for a healthy (and tasty) source of fat. Colorful and tasty, you know biting into this breakfast sandwich that it’ll give you the power you need to fuel your day.

Breakfast Power-Up Sandwich

Ingredients

Serves 1

  • 2 slice of whole grain bread
  • 2 oz. smoked salmon
  • 2 whole avocados, smashed
  • 1/2 sliced purple daikon, pickled
  • 1 egg, poached
  • 3 sprigs watercress
  • 2 oz. leek pesto
  • 2 bunches leek tops, flash fried in deep fryer
  • 2 cups spinach
  • 1/2 cup extra virgin olive oil
  • 4 to 5 garlic cloves, roasted
  • 2 oz. lemon juice
  • 1/2 cup parmesan cheese

Directions

Start by making the leek pesto: Flash fry the leek tops in a deep fryer. In a food processor combine the leeks, spinach, pumpkin seeds, parmesan cheese and garlic. Pulse until pumpkin seeds are chopped fine. With the motor running, add the oil and lemon in a slow stream and blend the pesto until smooth.

To make the sandwich: Toast two slices of bread. Smash the avocados together in a bowl and spread onto one slice of bread. Top the avocado with the smoked salmon and place a poached egg on top. Garnish the sandwich with the watercress and the sliced daikon. Lastly put the leek pesto on the side and lay the remaining piece of bread on top.
