Nowadays I find myself trading in warm oatmeal for cool smoothies, my afternoon hot tea for iced…you get the point. So with that in mind, I decided to make a refreshing afternoon snack that would be perfect for after a hot spring/summer ride. I was looking for something with some protein to restore and rebuild and potassium to replace everything lost through all the sweating! And that’s when I came up with these protein-rich chocolate covered bananas!
These are so versatile and fun to make. You can top them with whatever you like—coconut, nuts, cocoa nibs. Instead of doing the usual melted chocolate, I decided to get adventurous and make my own chocolate using Natural Citizen Organic Protein! This spring/summer snack came together perfectly! It’s refreshing but not too sweet, and has everything you need to get you through a long hot day. Plus it is so fun to make. The only hard part is waiting for it to freeze! This may even be worse than waiting for cookies to finish baking.
Protein Rich Chocolate Covered Bananas
- 1/2 cup melted organic coconut oil
- 1/4 cup Natural Citizen Organic Protein Powder
- 1/4 cup cocoa powder
- 4 bananas cut in half
- Almond butter or your favorite nut butter to drizzle
Optional toppings–coconut, nuts, coca nibs
- Cut bananas in half place on a tray lined with parchment. Freeze for at least one hour. (The bananas need to be cold enough so that when you dip them, the chocolate freezes.)
- Meanwhile, combine coconut oil, protein powder and cocoa powder in a bowl. Mix until evenly combined.
- Once bananas are frozen, use a spoon to coat the bananas with the chocolate mixture and then place back on the tray. You can do two coats if you like.
- Once the banana is coated with chocolate, drizzle almond butter or your favorite nut butter over it. Sprinkle with toppings and freeze again. Serve frozen!
