I love TV cooking shows, especially the latest addition to the reality line-up, Rocco’s Dinner Party. But when it comes to cooking for myself – especially in the summer months when there are a bazillion different things I’d rather do with my time than be stuck indoors – I opt for the simplest possible cuisine. Low-maintenance salads are a staple, and there’s nothing that quite combines the flavors of summer with a quick turnaround time than this easy asparagus salad. Here’s all you need to do:
Trim, chop and steam a bundle of fresh asparagus spears. Dunk the pieces in icy cold water once they’ve finished steaming to preserve an al dente texture. Drain and set them in a large bowl.
Add halved plum tomatoes, slivers of bermuda onion and chunks of avocado (in whatever quantities suit your taste).
Toss the whole lot with a light balsamic vinaigrette, a pinch of sea salt and some fresh ground pepper.
This salad is terrific solo, or serve it as a side with grilled chicken sausages. If you prefer a tangy twist, throw in a handful of feta cheese crumbles. Enjoy!
