Chocolate Protein Mug Cake

Late night eating is a downfall for many people. After a long day of healthy eating, discipline often sets with the sun, even for the most health-conscious person. You reach for convenient and satisfying snacks that comfort you as you wind down. I came up with this easy and satisfying late-night snack that is loaded with protein and will actually help with muscle recovery as you sleep.

I used AboutTime Protein because I love the flavor. It is also vegan, gluten-free, soy-free and has no added sugar—the perfect protein powder for this protein mug cake!

It only takes minutes to prepare so when you feel yourself reaching for that candy bar (unless it is this raw candy bar, of course), you can whip this up and eat it almost immediately!

Like most of my recipes, many ingredients are interchangeable so you can personalize it with your favorite add ins—nut butter, berries, whatever you like! And unlike most gluten free cakes, which are dense and heavy, this one is super light and airy. Give it a try for yourself!

Chocolate Protein Mug Cake:

1 scoop AboutTime Protein 
2 tablespoons cocoa powder
2 tablespoons coconut flour
1/4 teaspoon baking powder
1 organic egg
1/2 cup almond milk
3 tablespoons stevia sweetened chocolate chips

Directions:

In a small microwave safe bowl combine protein powder, cocoa powder, coconut flour and baking powder. In a separate bowl whisk together egg and almond milk. Mix in the wet mixture with the dry ingredients. Top with chocolate chips. Microwave for 60 seconds.
