Sometimes called the “sunshine vitamin,” vitamin D is produced naturally in your body through exposure to that great big star—but it’s difficult to find in food. That means those of us who work long hours indoors or who are extra vigilant with sunscreen can become deficient—an issue particularly worrisome for runners as vitamin D works with calcium to strengthen bones.
The good news is a growing number of mushroom farmers are fortifying their crops naturally by exposing the fungi to ultraviolet rays. Check the box at your grocery store (or ask the vendor at your local farmer’s market) to see if your mushrooms can give you light.
