Hungry Girlfredo Butternut Fries

Serves 2

Ingredients:
Nonstick spray
2-lb. butternut squash
1⁄8 tsp. coarse salt
3 Tbsp. fat-free sour cream
1 Tbsp. reduced-fat Parmesan style grated topping
1⁄8 tsp. garlic powder
Dash black pepper
3 wedges The Laughing Cow Light Creamy Swiss cheese, diced
2 Tbsp. water

Directions:
Preheat oven to 425 degrees. Spray two baking sheets with nonstick spray.

Peel squash and slice off the ends. Cut in half widthwise, just above the round bottom. Cut the round piece in half lengthwise and scoop out the seeds.

Cut squash into French fry-shaped spears. Thoroughly pat dry. Lay spears on baking sheets and sprinkle with salt. Bake for 20 minutes. Flip spears and bake until tender on the inside and crispy on the outside, about 15 minutes longer.

In a microwave-safe bowl, mix sour cream, Parmesan-style topping, garlic powder, black pepper, cheese wedges and water. Microwave at 50 percent power for 1 minute.

Stir and microwave at 50 percent power for 30 seconds longer, or until cheese is melted. Stir sour cream mixture, spoon over fries and enjoy!
