Seaweed has long been a staple in the Japanese diet—and with good reason. This vegetable is often overlooked in the standard American diet, conspicuously absent from the pantries of home cooks and from the menus of many Western-style restaurants. Consider snacking on dried seaweed before or after a sweaty summer run to replace salt and a host of good-for-you nutrients, including vitamins A and C and iodine.
