Bored of the same old vegetable side dish? This fall favorite can be made all year long, and the tartness of the cranberry complements the natural sugars in the dates, all dressed in balsamic vinegar!
Cranberry Date Caramelized Brussels Sprouts
Ingredients:
8 cups Brussels sprouts, quartered and steamed to al dente
3 cups fresh or frozen cranberries
2 cups chopped pitted dates
1 cup or 2 medium sliced shallots/onions
3/4 cup balsamic vinegar
Salt to taste
Directions:
Preheat oven to 375 degrees. Place steamed Brussels sprouts in a large mixing bowl with remaining ingredients. Mix together so everything is evenly coated. Line two baking trays with parchment paper and spray with oil. Place mixture on the trays, making sure it is evenly spread out. Bake for 35– 45 minutes or until golden brown.
