Beet Salad
Serves 6
6 beets
2 Tbsp. olive oil
1 Tbsp. red wine vinegar
1 shallot, minced
1 clove garlic, minced
2 Tbsp. orange zest
4 cup orange juice
Salt and pepper to taste
2 cup feta, crumbled
2 cup walnuts, chopped
Preheat oven to 350 degrees. Wrap beets in tinfoil and roast for 90 minutes. Remove beets from oven and while they are still warm, rub their skin off with a paper towel and cut into 1-inch cubes. In a separate bowl, whisk together ingredients through salt and pepper. Mix in beets. When beets are cool, add feta and nuts. Enjoy!
