Sarah Canney (runfargirl.com) and her kids snack on this mixture by the handful as a snack or enjoy it as a topping for Greek yogurt. Her mom used to make homemade granola when she was a kid, so she’s running with that tradition.
Grain-Free Granola
Makes 6 cups
1 cup sunflower seeds
1 cup chopped pecans
1 cup almond meal
1½ cups shredded coconut
¼ cup chia seeds
½ cup coconut oil
¼ cup of maple syrup
1 tsp. cinnamon
Dash of ground cloves, nutmeg and ginger
1 cup raisins
Preheat oven to 300 degrees. Combine sunflower seeds, pecans, almond meal, coconut and chia seeds in a large bowl. On medium heat, melt coconut oil with maple syrup and spices. Add dry ingredients with wet and stir to coat. Transfer to a large baking sheet. Bake for 25 to 30 minutes, stirring halfway through. When finished roasting, allow to cool on baking sheet for 10 minutes. Then mix in raisins and store in airtight containers or eat immediately.
