This Tasty Pasta Sauce Is Loaded With Nutrients

For a powerhouse of nutrients in one spherical package, tomatoes offer vitamin B6 to help you store glycogen, potassium and lycopene, which may reduce the risk of heart disease and stroke.

This simple recipe uses the oven to turn fresh tomatoes into a tasty sauce that can be served over pasta. The flavors become more concentrated as the sauce bakes.

Roasted Tomato Sauce Recipe
Serves 2

Ingredients:

1 pound tomatoes, diced into 1/2 inch pieces
2 cloves garlic, thinly sliced
5 pitted black olives, such as Kalamata, chopped
1/2 tsp. dried oregano
Salt and pepper, to taste
1 Tbsp. olive oil
2 T bsp. grated Parmesan cheese

Directions:

Preheat oven to 400 degrees. Place tomatoes in an 8-by-8-inch roasting pan. Add garlic, olives, oregano, salt and pepper. Drizzle with olive oil. Toss to mix well. Bake 45 minutes, stirring occasionally, until the liquid has mostly evaporated and the flavors have concentrated. Serve over pasta. Top each serving with a tablespoon of Parmesan cheese.
