Oven-blasted beets are deliciously sweet. Buzz them in the blender and reap the rewards of their nitrates, proven by research to aid your run. Strawberries supply a payload of vitamin C, a nutrient shown to help lessen the chances runners will come down with a case of the sniffles. Icelandic-style skyr is another protein-packed yogurt option. (Cooked beets can be chilled for up to 5 days.)
BERRY BEET BOWL
SERVES 1
Ingredients:
1 medium beet, ends trimmed
1/4 cup milk or plain non-dairy milk
1/2 cup plain Greek yogurt
1 tsp. orange zest
1/2-inch piece fresh ginger
1 cup fresh or frozen strawberries
1 frozen banana, chopped
Garnish options: Chopped unsalted pistachios, cacao nibs
Directions:
Preheat oven to 375. Wrap beet in foil and bake for about an hour, or until soft when pierced with a fork. Remove from oven and allow to cool. Place milk, yogurt, orange zest, ginger, beet, strawberries and banana in a blender container, and blend until smooth. Place in a bowl, and garnish with pistachios and cacao nibs or other desired toppings.
