This spin on traditional chocolate pudding is full of healthy fats and fiber, but still as smooth and delicious as the original!
1 ripe avocado, peeled and pitted
3 dates, pitted and soaked in warm water for 30 minutes
1/2 cup cocoa powder
1/4 cup honey
1 cup dark chocolate almond milk
1 tsp. vanilla extract
Pinch sea salt
Pinch cinnamon, optional
Put all ingredients in a high-powered blender or food processor and whir until creamy, adding more milk if necessary. Spoon into four dishes and chill. It will firm up as it chills. Eat it as is, or serve with a dollop of coconut cream (whipped coconut milk) for over-the-top goodness—and more healthy fats, of course!
