I’m a big fan of oatmeal and overnight oats—and oatmeal cookies—for breakfast or a snack. Recently, I made this delicious overnight oats recipe without dairy. I was out of my usual greek yogurt so I improvised and it came out great. The addition of chia seeds thickens the mixture and gives it extra chew.

In case you’re new to the overnight oats game, they are basically oats you soften and prepare in the fridge overnight—no cooking required! You mix it all together and can grab it and go in the morning without fuss.

Dairy-Free Overnight Oats

Ingredients:
1/2 cup quick cook oats
1 Tbsp or packet sweetener of your choice (NOTE: I used Stevia)
Pinch of salt and dash of cinnamon
1 Tbsp chia seeds
3/4 cup almond milk

Directions:
Mix all ingredients and set in fridge overnight. In the morning, stir and top with your favorite oatmeal toppings. I used pecans and raspberries.
