This delicious taco dish is proof positive that even something super good can have a little naughty inside: Adding a half cup of lager to these Cilantro-Lime Shrimp Tacos makes a difference.
Beer isn’t exactly a health food, but that doesn’t mean that popping a cold one doesn’t have some health benefits. Take a pass on those low-carb light beers—you’ll get the most bang for your buck with a lager. In addition to an energy boost from calories and carbs, it comes with some potassium and even a little bit of protein.
Cilantro-Lime Shrimp Tacos
Serves 2 to 4
2 T olive oil
3 cloves garlic, chopped
1 pound large shrimp, peeled and deveined
½ tsp kosher salt
¼ tsp freshly ground black pepper
½ cup beer, such as Corona or Pacifico
Juice of 1 lime
½ cup chopped fresh cilantro
Heat the oil in a large skillet over medium-high heat. Add the garlic and cook until fragrant, about 30 seconds. Add the shrimp, season with salt and pepper, and cook undisturbed for 1 minute. Flip the shrimp, pour in the beer, and cook until the shrimp are opaque and the liquid is reduced by about half, approximately 2 minutes.
Remove the skillet from heat. Stir in the lime juice and cilantro.
Serve with tortillas or over rice, topped with chopped avocado.
