The Sweet Potato Toast That’s Loaded With Healthy Protein

Sweet potato “toast” is one social-media culinary trend worth embracing. Oven-roasted slices of the spud provide a sweet base for this combo of smoky beans and protein-packed turkey that can be served for lunch or dinner. Not to be overlooked is that sweet potato is a leading source of beta-carotene, a nutrient that can be converted to vitamin A in the body for better immune and bone health.

Chipotle Bean And Turkey Sweet Potato Toast Recipe

Makes 4 servings


  • 2 large sweet potatoes
  • 3 tsp canola oil
  • Salt (to taste)
  • Pepper (to taste)
  • 1 lb boneless turkey breast
  • 1 c refried beans
  • 1 can chipotle chili pepper in adobo sauce
  • 1 Tbsp tomato paste
  • Cilantro (to taste)


Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Cut the ends off sweet potatoes and then slice lengthwise into 1/4-inch slices. Place sweet potato slices on baking sheet in a single layer, brush tops with canola oil and season with salt and pepper. Roast for 10 minutes, flip potato slices, lightly brush with more oil and heat for another 10 minutes or until tender. Slice boneless turkey breast into 1-inch strips and season with salt and pepper. Heat remaining 2 teaspoons canola oil in a skillet over medium-high and heat turkey strips until cooked through, flipping once, about 4 minutes. Stir together refried beans, minced canned chipotle chili pepper in adobo sauce and tomato paste. To serve, spread bean mixture on sweet potato toast slices and top with turkey and chopped cilantro.
