We are going to talk about the importance of leftovers. I do not like to prepare a meal from scratch every night on the weeknights, when it’s super busy. Instead, we get really creative in this household with leftovers. My husband is afraid to mess with my leftovers in the fridge because he knows if he eats something from the fridge for lunch, he’s just ruined my dinner. I probably have an elaborate dinner planned in the back of my mind, making good use of all of our leftovers.

Some kind of things that I use is like our pulled chicken. I love to use it in tacos one night, put it on salads one night, and make it into a topping for rice bowls and power bowls.

Another night, any little scrap of leftover roasted veggies should not be tossed in the trash because that could be saved for a beautiful pizza topping. And then it doesn’t take much sauce to add a ton of flavor to your bowls. So if you have a little bit of sauce leftover from dinner, save it to make your lunch the next day a little bit more exciting.
