Did you know you can make vegan, nutrient-laden ice cream with just one ingredient? If you haven’t tried banana ice cream yet, ’tis the season to explore. All you need is a fully ripe bunch and a powerful blender. You’ll have an incredible, potassium-rich treat, perfect to fuel up and cool down before a hot summer run.
Frosty Banana Ice Cream
Ingredients
2 large overripe bananas
Optional:
1 Tbsp. honey or 1 tsp. stevia
Directions
Peel bananas and chop into discs. Place in plastic bag and freeze for 3 hours or overnight. Put discs (and sweetener, if using) in the bowl of a food processor or high-powered blender (like a Vitamix). Pulse until crumbly. Use a spatula to wipe down sides. Mix on high until bananas reach a creamy consistency, using a spatula as needed. Be patient—this will take a few minutes. Transfer to a plastic container and freeze until solid (about 1 hour). Scoop out and enjoy!
