CARROT CHEESECAKE BOWL
1/4 cup dried apricots
1/3 cup milk
1/2 cup reduced-fat ricotta cheese
2 tsp. almond butter
1/2 tsp. vanilla extract
1/4 ttsp. ground allspice
1 medium carrot, peeled and chopped
1 frozen banana, chopped
Garnish options: Coconut flakes, honey
Place apricots in a bowl, cover with warm water and soak for 15 minutes. Drain apricots. Place milk, ricotta, apricots, almond butter, vanilla, allspice, carrot and banana in a blender container, and blend until smooth. Add a bit more milk if needed to help with blending. Place in a bowl, and garnish with coconut flakes and honey or other desired toppings.

To keep your thick smoothie from thinning, serve in a cold bowl. About 30 minutes before serving, place your serving bowl in the freezer.
