One thing I quickly came to learn when I first started running and on any one of my other favorite outdoor adventures (hiking, mountain biking, camping, birding, among others) is how important nutrition is. Whether that’s the perfect breakfast to fuel a hard hour-long run or just packing the right snacks for a full day on the trail scouting for birds, I’m useless without fueling properly. 

I also just like to eat good food.

Just the other night I made this Instant Pot creamy chickpea curry from Vegetarian Times. It couldn’t have been easier: All I had to do was chop an onion, garlic, and ginger (and open a few cans) and let the instant pot do the rest. The sweet smell of coconut had my mouth watering while I cleaned up my work from the day and waited for it to finish cooking. After cleaning our plates, my husband and I were both thrilled that there would be leftovers for the next day. 

Recipes like that are just some of the great food and nutrition content available across all of the Outside brands. Then we can all get out and explore, happy and full.
